Let's make Rock Cakes to remember our trip to Uluru or Ayers Rock, Australia. The next best thing to being there!

The kids made Australian Rock Cakes when they returned home from Australia to remind them of Uluru or

They are easy to make and if you should accidentally on purpose drop one on the floor, Chico Chihuahua will pick it up for you!

Here are the ingredients

Australian Rock Cakes* 1 cup self-rising flour

* 1/4 tsp. salt

* 3 ounces fine sugar

* 3 ounces butter

* 1/4 tsp. allspice

* 1 egg

* 1 tbsp. milk (approximately)

* 4 ounces mixed dried fruit

Here are the instructions

* Sift flour and salt

* Rub in butter until it resembles fine bread crumbs

* Add sugar, spice and fruit

* Blend together with lightly beaten egg and milk

* Place spoonfuls of mixture on greased baking tray about 2" apart

* Bake for 15 minutes (depending on size) in moderate oven at 380 degrees

* Tip: If you add a little orange or red food coloring to the dough, your cakes can turn out red just like Ayers Rock!
